The slices of bread at your table here at Roots come from Grand Central Baking Co. in Southeast Portland. Founded in Seattle in 1972 by Gwenyth Bassetti and two good griends, Grand Central Baking Co. expanded to Portland in 1993.
For the past decade Grand Central has been supplying the Vancouver and Portland area with delicious rustic breads, hand-formed in the style of European and Mediterranean country breads.
These are true artisan breads -- between five and seven bakers touch each loaf as it is created. Up to 480 loaves of bread are baked at a time in the bakery's "Bongard" hearth ovens.
Chef Brad Root chose to serve bread made by Grand Central because, "it's consistently of high quality with a fantastic taste."
